Ice Cold vs Wood Roasted Shellfish at Serea

We know what you’re thinking, “If I’ve been to one San Diego seafood restaurant, I’ve seen it all.” Well, we’re here to say, “think again!” At Serea, we say it’s always best to have options. Some people like their shellfish ice cold, while others prefer something a little more on the smokey side.

WHAT ARE THE DIFFERENCES BETWEEN ICE COLD AND WOOD ROASTED?

Ice cold shellfish lend themselves to a more natural flavor. Oysters will taste like the ocean, while crab, shrimp, and lobster will have their own distinct flavors that you know and love, but with a refreshing snap that comes from being chilled over ice.

Woodfired shellfish, on the other hand, lend themselves to a distinct, smokey flavor. While the texture and flavor shifts are subtle, they are more robust than their ice cold counterparts. While it might seem counterintuitive to prepare an oyster like this, the final result is an oyster that’s been permeated with the smoky flavor of the burning wood while still retaining its juicy, succulent nature.

WHAT ARE OUR OPTIONS? 

At Serea, we offer Oysters (mix of East, West, & Baja), Mexican Blue Shrimp, Maine Lobster, and Seasonal Crab either Ice Cold or Wood Roasted. You also have the option of ordering individually or for the whole table if you’re feeling generous. Or maybe you’re looking for the best of both worlds. In that case, we strongly recommend getting an order of each!
