Winter Waters Series at Serea

Situated at the Hotel del Coronado in Southern California, Serea is just steps away from the beach. Naturally, we focus on serving dishes with sustainably sourced seafood to help preserve that ocean and its bounty for future generations.

It’s that dedication to sustainable seafood that’s inspired our upcoming Winter Waters dinner series. Not only will you have the chance to enjoy delicious meals prepared by Chef JoJo Ruiz and guests, but with every meal, you’ll be supporting the future of our oceans, too.

INTRODUCING THE WINTER WATERS SERIES

This series will be held on February 24th and March 2nd, and each will feature meals prepared by Chef JoJo Ruiz and guest chefs.

Chef JoJo Ruiz, Executive Chef both here at Serea and at Lionfish, is highly committed to sustainable seafood practices. In early 2019 and in 2020, he was awarded the James Beard Certified Smart Catch Leader accolade, thanks to that dedication. A San Diego native, Chef JoJo focuses on using local ingredients and produce in his culinary creations. Seasonality drives his dishes and his creativity. Chef JoJo is also involved in Waste Not San Diego, an organization that helps chefs to donate excess food to local nonprofits.

On February 24th, Chef JoJo will be cooking with Chef Diego Galicia. Chef Galicia was born in Toluca, Mexico. After moving to San Antonio in 2002, he attended the Culinary Institute of America in San Antonio. He worked in restaurants like Chef John Besh’s Luke, as well as Atelier Crenn in San Francisco and the Chicago-based Moto. In 2013, Galicia partnered with Rico Torres to open Mixtli in San Antonio.

On March 2nd, Chef JoJo will cook with Chef Jose Luis Hinostroza. Chef Hinostroza grew up in Southern California and became the kitchen manager at Chicago-based Alinea at the age of 21. He worked at El Celler de Can Roca in Spain, and held the title of Chef de Cuisine at De Kromme Watergang in the Netherlands. Today, he enjoys bringing Mexican flavors to the ARCA menu.

These dinners benefit the Surfrider Foundation, so with the purchase of your meal, you’ll also be contributing to the future of our oceans. The Surfrider Foundation is a nonprofit that works to protect oceans and beaches all throughout the country. The foundation focuses on threats to our oceans and beaches, including coastal development, sea walls, offshore oil drilling, and plastic pollution. By working to protect and preserve oceans, the foundation is helping to ensure the future of beach access and clean water availability.

We’ll be hosting two Winter Waters Series dates, so you have two chances to enjoy these delicious meals.

On Monday, February 24th, Chefs JoJo Ruiz and Diego Galicia will present the series from 6:00 to 9:00 pm.

On Monday, March 2nd, you’ll have the chance to enjoy a meal by Chefs JoJo Ruiz and Jose Luis Hinostroza from 6:00 to 9:00 pm.
