Third time’s a charm! The first two events in our Winter Waters Sustainable Dinner Series were so popular that we’ve put another one on the books!
Serẽa is located a literal stone’s throw from the beach in Southern California’s historic Hotel del Coronado. With such close proximity to the Pacific, it’s only appropriate that our establishment should focus on serving dishes that reflect the bounty of the ocean!
However, to ensure that future generations will be able to enjoy this bounty too, we believe it’s important to focus on sustainably sourced seafood. That’s the whole idea behind these dinners!

The Winter Waters Sustainable Dinner series is the marriage of our dedication to sustainable seafood and our desire to offer the most creative, innovative, and delicious cuisine possible.
Executive Chef JoJo Ruiz is deeply committed to sustainable seafood practices. In fact, he was given the James Beard Certified Smart Catch award to reflect that dedication!
San Diego native Ruiz makes it his mission to use the highest quality locally and sustainably sourced ingredients possible. Not only is it the best for the environment and ecosystem, but it often yields the most delicious dishes! Of course, if you’ve ever tasted his seasonally-driven California cuisine inspired creations, you don’t need to be told that.
Ruiz’s dedication to making the world a better place doesn’t end there: he’s also involved with Waste Not San Diego, an organization that helps chefs to donate excess food to local nonprofits.
Why not taste the difference it makes to do good with food? With our Winter Waters series, you get the chance to relish in creative dishes created by Chef JoJo and a carefully curated roster of guest chefs … While also doing a ton of good for the area and the environment!

Chef Jose Luis Hinostroza is a “mostly plant based chef” and the co-owner of Restaurants Arca and Bar Atila in Tulum Mexico. Check out his mouthwatering feed on Instagram: @seriousmouthfuls
Hinostroza grew up in So-Cal, but moved on to become the manager at famed Chicago restaurant Alinea at the tender age of 21. Not one to stay in one place, his resume includes stints at El Celler de Can Roca in Spain; he was also Chef de Cuisine at De Kromme Watergang in the Netherlands.
Today, he enjoys bringing Mexican flavors to the menu at ARCA and Bar Atila. Don’t miss sampling his cuisine at the end of this month at Serẽa!
